so I’m kind of on a health kick right now. scratch that, i AM on a health kick and i’m kicking ass!  so one of the things i love during a health kick are pickles because they are veggies but all dolled up in spices and vinegar and you can eat a ton. so friday night i got it in my head that i’d make some fridge pickles.

i’m actually a bit of a pro-pickler. laura (my cfo) taught me the ways years ago:

but last night i wanted pickles asap and normally you gotta age those suckers for months.

anyway, i googled a fridge method – meaning you boil the veggies a bit in the brine to get the process started and then they go straight to the fridge and keep about a month (normal pickles last a year or so).

i went to metro and loaded up – cauliflower, carrots, beans, jalapenos, radishes, asparagus – i bought it all – along with salt, chili flake and the good ol’ vinegar. i spent the whole night chopping, sanitizing, making brine, boiling the veggies, then packing the pickled items. i popped them in the fridge and wanted a few hours until chilled.

annnnnnddddd…… fail. terrible f for these fridge pickles. i think my error was boiling the veggies too long – so they were soft and not so crunchy. plus i made the brine too intense. at any rate – don’t follow my lead – make the bonafide laura pickles as per the video above for perfect pickles.

they are worth the wait.
